  材料:

  活蝦 300g、大蒜 2瓣、土豆 200g、米椒 2個、大蔥2根、豆瓣醬 一勺、料酒 1勺、食用油 適量、孜然 少許、生抽 半勺

  步驟:

  1. 選用本地產新鮮小土豆,切成小拇指粗左右的段,用清水漂五分鐘。

  2. 鮮蝦剪去蝦須和腳,挑去蝦線,漂水后瀝干。

  8. 另起油鍋,鍋內留少許油,放進切成粒的大蒜和米椒爆香后舀入一勺豆瓣醬,轉小火炒出香味(注,豆瓣醬可事先用刀剁細,成品會更漂亮)。

  9. 倒入土豆翻炒上色。

  10. 再倒入蝦翻炒30秒后淋入一勺料酒和生抽。淋入料酒后要立刻蓋上鍋蓋,幫助酒氣燜進菜里,過程不用長,十幾秒即可。

  11. 撒入孜然碎翻炒。

  12. 再撒入蔥花即可起鍋。
